These little cake mix cookie sandwiches are adorable! I can’t believe I haven’t made these before now. These are the perfect little desserts for parties, showers, and receptions. They’re pretty good everyday snacks, too! Colors just add to the fun!
You’ll need:
- 1 box of white or yellow cake mix
- 1/4 cup vegetable oil
- 2 eggs
- food coloring
- frosting
What you’ll do:
- Mix the cake mix and the eggs together
- Separate the dough for your different colors. Use about 10 drops of food coloring to begin with and add more if desired
- Wrap each color in plastic wrap and chill in the fridge for about 30 minutes. If you don’t chill the mix, it’s a big mess when trying to make the little balls for the cookies
- Preheat the oven to 350 degrees
- Form the mix into cookies on a sheet and bake for about 7 minutes (remember, every oven is different!)
- Cool the cookies on a cooling rack for about a minute
- Add a little frosting and stick 2 cookies together
